Puffy Pancake
 
Ingredients:
  • 5 eggs
  • 1 1/4 cups flour
  • 1 1/4 cups milk
  • 1 stick butter
Preheat oven to 425 degrees. Put stick of butter in large, tall pot (like a dutch oven). Stick in oven. It will melt while you prep the rest of the Puffy Pancake.
In blender, blend 6 eggs, add milk, then gradually add flour. When butter is melted, pour this mixture into center of pot so butter remains on top of mixture.
Place in oven for about 15 minutes, or until the edges of the pancake swell up over the edges of the pot and turn golden brown. Check the center of the pancake with a knife to make sure cooked, the remove and eat.
It is good with strawberries, with powdered sugar, or just plain.
